Valentine Chocolates

Ingredients
- 1.5 cups granulated sugar
- 3/4 cup butter
- 1 can (5 oz) evaporated milk
- 2 packages Andes Mints
- 1 jar marshmallow creme or fluff
- 1 tsp vanilla extract
- 18 ounces semi-sweet chocolate chips
- 4 ounces (white if preferred) chocolate
- food coloring (of your choice really)
1. Prepare a cookie sheet by covering it in aluminum foil and spraying it with cooking spray.
2. Combine sugar, butter, and milk in a medium saucepan over medium-high heat. Bring to a boil, stirring constantly.
3. After mixture reaches a boil, reduce heat and cook, stirring occasionally, until everything is completely mixed and melted.
4. Remove from the heat and stir in the Andes mints until melted. Add the marshmallow cream and vanilla and stir until fully combined. Pour mixture in prepared cookie sheet and spread smooth. Refrigerate at least 1 hour.
5. Cut mixture into small squares. Roll the squares into balls and place back on the baking sheet.
Now this is your chance to get creative! For the outer covering, you can choose chocolate or white chocolate (or both!).
6. Melt the chocolate chips in the microwave. Dip the balls in the chocolate and put back on the baking sheet to harden. To speed up the process, you can put it in the freezer to harden.
7. Once hardened, if you wish, you can make designs with the opposite chocolate.
For example, if you dipped them in dark/milk chocolate, you can use white* chocolate and make strips, or dots, or whatever shapes you desire.
*This is where the food coloring comes in; when you use white chocolate, feel free to add coloring for a special twist!
8. Let cool, you can do this by putting the chocolate in the freezer till it becomes a solid.
*Tip* Be creative! If you want, you can shape the center of your candies into hearts, do not think they have to be circular!
Leftover chocolate? Don't be wasteful! Let it harden and then put it in a bag for later!
Or, if you want something other than pure chocolate, you can dip gummi bears into the extra chocolate! Yum!
